Sweet Potato Casserole with Praline Topping

1 C all-purpose flour
2/3 C packed brown sugar
1/4 C chopped pecans, toasted
1/4 C butter or margarine, melted
1/2 teaspoon ground cinnamon
4 medium-sized sweet potatoes, peeled and halved (about 2.5 pounds)
1/2 C granulated sugar
1 1/2 teaspoons vanilla extract
1 large egg white
1 (5-oz) can evaporated skim milk
Vegetable cooking spray

1. Preheat oven to 350 degrees.
2. Combine first 5 ingredients in a small bowl, stirring to form a streusel. Set aside.
3. Place potatoes in Dutch oven; add water to cover. Bring to a boil; cover, reduce heat, and simmer 30 minutes or until very tender. Drain well; place in a large bowl; and mash. Stir in 1 cup streusel, granulated sugar, and next 3 ingredients. Spoon into 2-quart casserole coated with cooking spray; top with remaining streusel.
4. Bake at 350 for 45 minutes.

Yield: 8 servings (serving size: 3/4 cup).

Scalloped Oysters

1 pint oysters
2 C medium-coarse cracker crumbs
½ C butter or margarine, melted
3/4 C light cream
1/4 C oyster liquor
1/4 teaspoon Worcestershire sauce
1/2 teaspoon salt
Pepper

1. Preheat oven to 350 degrees.
2. Drain oysters, reserving 1/4 cup of liquor.
3. Combine crumbs and butter.
4. Spread 1/3 of crumbs in greased baking dish.
5. Cover crumbs with half of oysters and sprinkle with pepper.
6. Using another third of the crumbs, spread a second layer, and cover with remaining oysters. Sprinkle with pepper.
7. Combine cream, oyster liquor, Worcestershire, and salt. Pour over oysters.
8. Top with last of crumbs.
9. Bake at 350 for 40 minutes.
10. Makes 4 servings.

Thanksgiving Recipes Empty Company Potatoes

Here's a staple in my family:

COMPANY POTATOES

8-10 medium potatoes
8 oz. cream cheese
1 cup sour cream
chives to taste
salt & pepper to taste
butter

Cook and mash potatoes. Set aside. Blend cream cheese and sour cream. Gradually add mashed potatoes a bit at a time. Beat until light and fluffy. Add chives, salt & pepper, and top with desired amounts of pats of butter. Spoon in buttered 2 quart casserole dish. Bake at 350 degrees for 30 - 40 minutes.

Thanksgiving Recipes Empty Cranberries in the Snow

This is a recipe that my family has made every Thanksgiving and Christmas since I was a little girl. IT IS SOOOOOOO YUMMY. EVen people who do not like cranberries love it... I LOVE IT!

Cranberries In The Snow

Ingredients:

1 bag of fresh cranberries
3/4 cup water
2 cups sugar
1 large box cherry jello
1 can crushed pineapple
1 cup pecan pieces

Topping:
2 - 8oz. pkgs of cream cheese
2 cups cool whip
1 large jar of marshmallow cream (16oz)

Cook cranberries and water in saucepan on medium heat until all the berries have popped. Add sugar, and jello and cook 1 min more. Remove from heat and stir in pineapple and pecans.

Pour mixture into a rectangular cake pan & put it in the fridge to cool.

When set, mix cream cheese, cool whip, and marshmallow cream together and spread over the top. Serve cold, store in fridge.

Harvest Pumpkin Bars

2 C. flour
2 C. sugar
1 T. pumpkin pie spice
2 t. cinnamon
2 t. baking powder
1 t. baking soda
½ t. salt
1 15 oz. can pumpkin
¾ C. vegetable oil
4 eggs, beaten

3 oz. softened cream cheese
6 T. softened butter
1 t. milk
1 t. vanilla extract
2 C. powdered sugar

Preheat oven to 350 degrees. Mix flour, sugar, pumpkin pie spice, cinnamon, baking powder, baking soda, and salt in large mixing bowl. Stir in pumpkin, oil, and eggs. Spread in greased 10 x 15 baking pan. Bake for 20-25 minutes or until edges pull from the sides of the pan. Cool in the pan. Combine cream cheese, butter, milk, and vanilla. Beat at medium-high speed until smooth, scraping the bowl occasionally. Add powdered sugar, beating constantly until spreading consistency. Spread over cake. Cut into bars, and enjoy.
