Bread Recipes Empty Corn Bread

Post by Xena Wed 22 Feb 2017, 9:10 pm

1 1/2 cups cornmeal
3 eggs
1 can mexican corn
2/3 cup wesson oil
1 cup buttermilk
8 oz. Mild Cheddar cheese
1 small onion (opitionial)

Pre-heat oven to 350 degrees. Mix ingredients in a large bowl. I sray my dish with Pam and pre-heat before pouring mixture in. Bake for approximately 30 minutes or until golden brown. I use a 9x13 glass baking dish and cut into squares. You can also add hot peppers to spice it up.

The way I love to eat mine is with a bowl of Blackeyed Peas and pea juice. lol I sorta smash it up together putting salt on top and boy! is it some kind of delicious!!

It also goes really good with Chili in the winter. Or a big ole pot of homemade veggie soup. Also great with meats and veggies.

Yeah! I am from the South!! Eatin' good in this neighbor!!! :hearts
