Grapefruit Recipes
Pink Grapefruit Sorbet
"A delightfully fresh, crisp ending to a meal or after a fish course to cleanse the palate. Garnish with small mint leaves or any small green herb leaf."
INGREDIENTS:
3 large pink or red grapefruit,
scrubbed
1 cup white sugar
1/4 cup light corn syrup 4 cups water
1 dash red food coloring
(optional)
DIRECTIONS:
1. Use a vegetable peeler or large zester to remove 3 long strips of peel (just the zest, not the pith) from the grapefruits. Set aside. Squeeze out 2 cups of grapefruit juice.
2. In a saucepan, combine the grapefruit peel, sugar, corn syrup and water. Bring to a boil, stirring to dissolve the sugar, and cook for about 2 minutes. Set aside to cool. Place in the refrigerator, or set in a bowl of ice for faster chilling. Discard the peel.
3. Strain the grapefruit juice through a sieve or strainer to remove the pulp. Discard pulp. Stir the sugar syrup into the grapefruit juice, and mix in food coloring one drop at a time to achieve a pleasing, believable pink. (In other words, don't overdo it.)
4. Pour into the container of an ice cream maker, and freeze according to the manufacturer's instructions. Transfer to a container and freeze until firm before serving.

"Bees made the honey that sweetens this pineapple, grapefruit and gin drink."
INGREDIENTS:
1 (46 fluid ounce) can
pineapple juice
1 (46 fluid ounce) can grapefruit juice
1 (8 ounce) jar honey
2 cups gin
DIRECTIONS:
1. In a blender combine pineapple juice, grapefruit juice, honey and gin. Blend until frothy. Pour into a pitcher and serve.

Oatmeal Grapefruit Quick Bread
Oatmeal Grapefruit Quick Bread
"A zingy, zippy new oatmeal bread. Tart and sweet at the same time!"
INGREDIENTS:
3 cups all-purpose flour
1/2 teaspoon salt
4 teaspoons baking powder
3/4 teaspoon baking soda
2/3 cup honey 1/4 cup margarine, softened
1 2/3 cups rolled oats
1 egg
1 1/4 cups grapefruit juice
1 cup chopped walnuts
DIRECTIONS:
1. Preheat oven to 350 degrees F (175 degrees C).
2. Sift together flour, salt, baking powder and soda into a large mixing bowl.
3. In a medium bowl, mix honey together with butter or margarine until creamy. Add to flour mixture along with the oats, egg, grapefruit juice and walnuts. Stir together until smooth and pour into a lightly greased 9x5 inch loaf pan.
4. Bake at 350 degrees F (175 degrees C) for 1 hour or until a toothpick inserted into the center comes out clean.

"Fresh grapefruit sections are arranged in the bottom of a baked pie shell. The juice is combined and cooked with sugar, a bit of cornstarch and strawberry gelatin. This refreshing concoction is poured over the fruit and the pie is chilled and served with whipped cream."
INGREDIENTS:
1 (9 inch) pie crust, baked
4 pink grapefruit
1/2 cup white sugar 1 tablespoon cornstarch
3/4 cup grapefruit juice
1 (3 ounce) package
strawberry flavored gelatin
DIRECTIONS:
1. Peel grapefruit, removing all pith. Cut up into bite size pieces. Drain in a strainer for 4 or more hours. This can be done the day before. Collect the juice.
2. Combine the sugar, cornstarch, and 3/4 cup juice in a small saucepan; if the collected juice does not measure 3/4 cup, top it off with water. Bring to a boil. Stir in strawberry gelatin. Cool slightly.
3. Spread grapefruit in the bottom of the baked shell, and pour gelatin over the fruit. Cool.

"You'll easily impress guests with this dessert. It takes some time to prepare, but the rave reviews I receive make it all worth it. --Peg Atzen, Hackensack, Minnesota"
INGREDIENTS:
4 large grapefruit
2 teaspoons rum extract
1/2 cup heavy whipping cream,
whipped
3 egg whites 1 teaspoon cornstarch
1/4 teaspoon cream of tartar
1/4 cup sugar
8 maraschino cherries
DIRECTIONS:
1. Halve grapefruit and section; remove membranes. Return grapefruit sections to grapefruit halves. Drizzle 1/4 teaspoon rum extract over each. Top with 1 rounded tablespoon of whipped cream; Place on an ungreased foil-lined baking sheet.
2. In a large mixing bowl, beat the egg whites, cornstarch and cream of tartar on medium speed until soft peaks form. Gradually beat in sugar, 1 tablespoon at a time, on high until stiff glossy peaks form and sugar is dissolved. Mound 1/2 cup on each grapefruit half; spread meringue to edges to seal. Bake at 350 degrees F for 15 minutes or until meringue is browned. Top each with a cherry. Serve immediately.

1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
3/4 cup shortening 1 1/2 cups packed brown sugar
2 eggs
3 tablespoons fresh grapefruit
juice
3 tablespoons grapefruit zest
DIRECTIONS:
1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9 inch square baking pan.
2. Combine flour, baking soda, cinnamon and salt and set aside. In large bowl, cream together shortening and brown sugar. Beat in the eggs, then add in grapefruit juice and zest and blend well. Gradually blend in flour mixture.
3. Bake for 25-30 minutes or until lightly colored on top. Set pan on a wire rack to cool. Frost with plain, lemon or orange icing and cut into bars.
