Easy Meals
Just needed to post to hopefully inspire others. This is good for when the weather starts getting warmer.
Tai Salad
2 bags Mixed greens
2 lbs. Chicken breast or 3 packs of pre-cooked grilled chicken
Also good for left-over turkey
1 box Linguine
1-2 bottles Tai peanut sauce
1 can Whole cashews
1 bottle Vinaigrette dressing
2 Tomatoes
2 Yellow pepper
1. Cook chicken (already sliced) with olive oil & peanut sauce. Put in plastic baggie in the refrigerator.
2. Cook linguine (sauté with olive oil & peanut sauce). Put in refrigerator.
3. Sauté cashews in Tai peanut sauce. Put in refrigerator.
When ingredients are cold assemble on large platter:
1. Lettuce
2. Noodles
3. Chicken
4. Cashews
5. Put tomatoes and yellow peppers around edge.
6. Mix 1/2 bottle of vinaigrette & 1/4 cup Tai peanut sauce and pour over salad.
