One-Pot Shrimp Dinner
One-Pot Shrimp Dinner
This recipe is for one person so just multiply to make more.
1/4 pound potato, raw
1 teaspoon seasoning, cajun
1/2 lemon, fresh
1/2 teaspoon black pepper
1/2 onion, yellow, whole
1 ear of corn on the cob
4 ounces shrimp, uncooked
Wash, peel and cut potato into chunks. Meanwhile, in a medium sauce pan or stock pot, bring 4 cups of water to a boil. Add seasoning, lemon, potatoes, and 1/2 teaspoon black pepper; boil for 10 minutes. Add onion, corn cob (cut in half) and shrimp, and bring back to boil. Boil 5 minutes; remove from heat and allow to stand covered 10 to 15 minutes. Pour into a colander, or carefully spoon out vegetables and then drain shrimp.
NOTE: The above is the original recipe. This is what I add to mine. I increase the amount of cajan seasoning to at least a Tablespoon (I like it), increase the lemon to 2 lemons (sliced in half), I use baby red potatoes (scrub and cut, no peel)
